Laura's Pumpkin Dump Cake

Here is the highly-requested cake recipe from Laura Evans. It was heavenly! Enjoy!

Pumpkin Dump Cake

  • 1 15 oz can Pumpkin Puree
  • 1 10 oz can Evaporated Milk
  • 1 cup light brown sugar
  • 3 eggs
  • 3 tsp pumpkin pie spice
  • 1 box yellow cake mix
  • 1 cup (2 sticks) butter melted
  • 1/2 cup coarsely crushed graham crackers or graham cracker crumbs
  • 1/2 cup chopped pecans
  • 1/2 cup toffee bits (Heath bar chips)

Instructions

  1. Preheat oven to 350
  2. Spray a 9×13 baking pan lightly with cooking/baking spray
  3. In a large bowl combine the pumpkin, evaporated milk, sugar, eggs and pumpkin pie spice. Stir to combine.
  4. Pour into your prepared pan.
  5. Sprinkle your entire box of cake mix on top, followed by your nuts, graham cracker crumbs and toffee chips.
  6. Pour your melted butter evenly on top.
  7. Bake for 45-50 minutes until center is set and edges are lightly browned.

Quick notes

Serve with ice cream or whipped cream.

We bought two bookshelves from IKEA in August. After much deliberation we have decided that they are simply too big for the space we intended them. We are hoping to sell the set for $100.00. We purchased the shelves for $90.00 each. They are in great condition, and have hardly been used. Please let me know if you are interested in them. I hope we can find a home for them. Loni's White Chicken Chili Recipe

"It's a great crowd pleasing, family feeding meal. For those of you old timers out there, I made it for that chili cook-off we had a couple of years ago. It won some sort of award, just FYI. :)"

White Chicken Chili/Soup

Adapted by Loni Jenks from the BYU Cooking Class Recipe Book by Janet
Stocks

3-4 cans great northern white beans, drained and rinsed
1/2 lb. bacon, diced and cooked
1-2 cups of mild salsa
3-4 chicken breasts
8 oz. shredded pepper jack cheese
Chicken stock

Cook the chicken with half the salsa, either in a pot or a slow cooker, then shred
it. Cook the bacon (I like to bake mine in the oven on a cookie sheet lined with
parchment paper because to clean up you just have to wait for the grease to
cool, roll it all up to and throw it away!).

Combine all the ingredients, except the cheese, in a heavy pot or slow cooker.
Add chicken stock as desired to loosen it up. Simmer over medium heat for 15
minutes or so (for a slow cooker about an hour) until ingredients are warmed
through. Stir in the cheese and simmer a little while longer until it's melted. Add
any additional chicken stock to make it your desired consistency.

Serve with tortilla chips.

URGENT NEED

Dear Sisters,
We just were contacted by Dawn Davis, with the Laura Recovery Center, they work to find missing children and adults. They just began a search for an LDS sister from the Pasadena area. However, this touches us close to home because her daughter is a member of the Friendswood 2 Ward.
Lillian is 82 years old and works at the Chase Bank right by the AMC at Beltway 8 and 45 freeway. She went missing yesterday morning, so the Laura Recovery center has their RV in the parking lot of the AMC theatres and is in desparate need of volunteers.
The volunteers will be handing out fliers in the surrounding area (businesses etc.) Until 6 p.m. tonight. Even if you can only help an hour or two, we need your help.
Please forward this email to all your sisters TODAY. The Laura Recovery Center can use male or female volunteers that are at least 18 years or older.
